Sage and Rosemary Garlic Pork Roast with mixed veggies and apples

So I was kind of winging this so that I could use a defrosted pork roast.

1 Pork Roast
1 Apple
1 Onion
1 Red Pepper
3-5 Big Mushrooms
2-3 Sprigs of Parsley
Salt and Pepper
2-3 Tbsp of Olive oil
3-4 Tbsp of Chopped Garlic
Sage and Rosemary sprigs

 Preheat your oven to 375 deg F and plop your roast in a pan with Pam sprayed on the bottom.
 Toss in all your veggies, spices, and oil. If you don't want to add the apples, that's fine but they add some sweetness to the sauce.
 I'm way too excited to pick my own herbs for stuff like this! yay!
 Assemble everything.
Cook for about 1hr 45 min in the oven or until your roast is above 145 deg F
