What was supposed to be chicken caesar salad.... but turned into mad scientist steak salad.....

So I was craving a chicken caesar salad at around lunch time and thought I had all the ingredients at home....turns out I didn't!!

So here are the ingredients I did have.... and what I made instead...
- Balsamic Vinegar (about 2 tablespoons)
- Worcestershire sauce (about 1 tablespoon)
- A1 Sauce (about 2 teaspoons)
- STEAK
- Lettuce
- Cucumber
- Carrot
- Cheese
- Dressing


 Toss your sauces in with your steak and marinade! I let mine sit for about an hour and went for a run :)
 Get out all of your stuff for a salad... whatever you want really... I like my salads somewhat plain.
 Brown up some garlic in your fry pan ...
 Toss your steak in there.... I let mine simmer on the first side for about 3 minutes and flipped.
 Then I browned the second side for another 3-4 minutes.... but I like my beef medium rare....
 Assemble your salad while you're waiting for your steak to rest a bit....
Cut steak and put it in your salad...... then enjoy!

Honey Lime Tilapia with Citrus and Parsley Couscous and mixed Veggies

So my dad asked for a fish dish and this one definitely sounded delicious for dinner tonight!


Ingredients:
Fish:
4 cuts of Tilapia
Lime Zest
Lime juice - about 1 tablespoon
2 tablespoons honey
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/4 cup whole wheat flour
A pinch of salt and pepper

Couscous:
Plain Couscous - 1 cup
1 tablespoon olive oil
1/4 cup parsple
1 tablespoon diced garlic
1 tablespoon lemon juice
Lemon zest

Veggies:
Green Beans
Zuchini
Garlic Salt
1 tablespoon lemon juice



 Mix up a marinade for the tilapia with all of the ingredients for the fish except for the flour, salt, and pepper.
 Put the tilapia in a bowl with the marinade for about 30 minutes.
 While the fish was marinating I started the couscous and veggies. Make the couscous according to the package but also put all of the ingredients in the boiling water. 
 Once the water is boiling,  put the couscous in the pan and take off direct heat. (This will be done in about 5 minutes)
 Make your flour, salt, and pepper mixture for coating the fish. These ingredients are just spred on a plate for easy coating.
 Put all of the ingredients for the veggies into a pan and let simmer. (This will be done about the time your fish is done)
Coat both sides of each tilapia filet in the flour mixture. This will only be a thin coat.
 Allow your oil to heat in your fry pan and place the coated fish in once the oil is simmering. Leave the fish on one side for 4 minutes and flip.
 

 Then let the tilapia cook on the other side for about 2-3 minutes. Don't touch the fish until you're flipping or taking off the heat!!!!

Plate and Enjoy!!!

Skinny Mac and Alfredo

I started with this recipe

Ingredients:
2 cups whole grain pasta
1 jar of alfredo sauce (the light kind) but any extra flavors you want
1 cup of cubed ham
1/2 package of frozen spinach (thawed and drained)
1/3 cup light soy milk
1 cup fat free cottage cheese
2-3 tsp chopped garlic
1/2 tsp dried basil
1 egg
1/3 cup veggie cheese mozzarella
5 slices of fresh mozzarella

Preheat oven to 450 deg F

 So I got all of my ingredients out and put the pasta on to boil.
 In a separate bowl I mixed everything except the pasta and the slices of fresh mozzarella.



When the pasta was done I drained and then rinsed it with cold water.
In a 9x9 glass pan (sprayed with pam or equivalent) I layered the sauce and pasta. and put in the oven for 10 minutes.
 Take out your pasta and put the sliced mozzarella on top and put back into the oven for 10 more minutes to melt and brown the top.
 I put together a salad during this cooking time.
Take out of the oven and enjoy!

Skinny Chicken and Broccoli Alfredo with Miracle Fettuccini

These are the ingredients I used: (for two servings)
3 Chicken Breast tenderloins
1 cup chicken broth
1/2 cup soy milk
1 tbsp. chopped garlic
1/8-1/4 cup greek yogurt
1 tbsp. olive oil
1 tbsp. flour
a couple of shakes of nutmeg and pepper
1/2 cup veggie parmesan cheese
1 package of miracle noodles


 Chop the chicken tenderloins into small cubes and put them into a pan sprayed with pan to cook for about 5 minutes on each side. Start another pan on low heat with your oil and garlic.
 Steam your broccoli at the some time.
 Cook your garlic until brown and then add the flour and mix until smooth.

 
 Add all other ingredients except cheese and bring to a boil then promptly reduce heat to a simmer. Add cheese and stir constantly until mixed.
 Add your chicken and broccoli and stir until coated. Add pasta.
Serve and enjoy!

Cilantro, Avacado, and Lime Pasta with Crab

Ingredients!
3 Tbsp. of miracle whip (I used the light kind)
1 tsp. chopped garlic paste
salt and pepper to taste
2 Tbsp. lime juice
Handful of chopped Cilantro
1 ripe Avocado
1 1/2 Cups Pasta

 I used Spinach miracle noodles for my pasta but you can use whatever kind you want. Shells or rotini would probably be good.
 I got everything out and started chopping and mixing :)
 I boiled the miracle noodles to even out their texture.
 When you're trying to chop your avocado.... take your knife and rotate the avocado under it until you finish the whole circle. Then spin the two halves in opposite directions to split it. To get the pit out take your knife and hit the pit lightly and spin. That should release the pit.
 Now you can put all of the ingredients in a food processor and blend for a creamy sauce but I wanted the chunks in my sauce.
 I threw some crab into this sauce but you can put anything you want. Ham chunks or shrimp would probably be great!
Pour over your pasta and mix...Enjoy!

Broccoli and Bacon Quiche

Here is my ingredient list for the quiche:
1 store bought raw pie crust
4 strips center cut bacon
2 cups broccoli florets, chopped
1 cup sharp cheddar veggie cheese
1 cup soy milk
1/4 cup heavy cream
4 eggs
1/2 teaspoon salt
1/8 teaspoon ground black pepper

 I cooked the pie crust according to the package instructions. Then while it was cooling, I went to boxing and got a workout in!
 
 Set oven at 350 degrees Fahrenheit.

 I put the bacon in a pan and cooked normally, about 3 minutes each side.
 

 Then I wiped out the pan and put the broccoli in to cook. This took 5-8 minutes with stirring.
 All of the other ingredients can be mixed in a bowl. Wisk this mixture until mixed and thick.
 Put the bacon and broccoli in the crust.
 

 Pour your egg mixture over the bacon and broccoli and mix slightly. Then place in the oven.
 

 Take out of oven after about 35 minutes, or when the center does not jiggle.

Delicious Spicy Greek Yogurt Chicken

Ingredients:
- 3 Chicken Breasts
- 1 Cup Greek yogurt
- 1/2 Cup mix of mozzarella and parmesan veggie cheese 
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp garlic salt
- 1 tbsp seasoning of your choice (I used dip spices)
- 1 tsp garlic powder
- 2 tsp chili flakes
 

 

 Mix everything but the chicken together into a sauce.

 Place each chicken breast on a piece of tin foil large enough to fold into a packet.
 Coat the chicken with your sauce.
 Fold up and bake for 35 minutes at 40 degrees Fahrenheit.
While your chicken is baking, toss a salad, and make a cup of rice per serving...
 Invite a friend over like I did....
