Bacon Wrapped Red Pepper and Cheese Stuffed Chicken Breast

So I've been taking a blog break for a bit but here's some Bacony Goodness to start back up.

Ingredients:
- 2 Chicken breasts
- 1 cup of cheese
- salt and pepper
- 1 red pepper
- 4-6 slices of bacon



1. Preheat the oven to 350F
2. Slice your pepper into thin slices.
3. Butterfly fillet your chicken breasts so you make little pockets in them for your filling

4. Place your peppers and cheese in the chicken breasts and salt and pepper them.

5. Wrap your chicken with 2-3 slices of bacon to keep it closed.

6. Cook for 30 minutes and then set your oven on broil for another 5 minutes.
7. While you're doing all that make a side to go with it as well. I made green beans with garlic in the oven as well.

Steak with Spinach, Arulula, and Pasta Salad


I got this recipie from my kickboxing teacher Sonia! It's delicious!
I also added Spinach to the salad and cut the amount of pasta in half, along with using a while wheat pasta.


 I added a lot more garlic to my steak because I love it but you just add whatever you like.
 Start the pasta a little before the steak.
 Try to only flip your steak once.
 While everything is cooking get your sauce together. I added a bit more basil than called for along with adding the pasta water before tossing it.
Then I sliced up the steak and tossed the whole thing more as a salad than a pasta. About 3 cups of spinach and arugula to every 1/2-1 cup of pasta.
Enjoy! The dressing is amazing.... if you can make extra and jar it for later salads.....

Spaghetti Squash Mock Pasta with Turkey Meatballs

I haven't posted in a while! Been Busy! But here is a recipe for pasta-less spaghetti using a squash.... I promise you can sort of pretend it's pasta :)


 Cut and core your squash to place face down on your cookie sheet.




 Cook the Meatballs for about 30 minutes and the squash for 45 minutes. While this is cooking, throw a can of tomato sauce and a can of tomato paste with some shallots and herbs in a pan to heat up for your sauce. This will really only take 10-15 minutes, so time accordingly.

 The squash will do this easily when it's done.


Then enjoy your fake pasta and the fact that it's only made of veggies!

Pull apart Bacon Pizza Bread








 I took the tin foil off after the additional 10 minutes and cooked for 5 more minutes to brown.
I made a tomato, garlic, and basil sauce along with a rosemary and garlic olive oil dip. Delicious!!!

Honey and Beer Glazed Chicken and Veggie Skewers




 While that was marinating we walked the doggies and made sangria.... yum

 I also cut up some veggies for the chicken skewers.



Sweet and Spicy Dorito crusted Chicken Breasts with Veggie Medley

So, since I'm doing a bunch at once, I'm just going to post the picture of the ingredients and the directions.




I used red peppers, zucchini, and garlic for my veggie medley. I just sautéed these until they were cooked the amount I like!
 Mid chicken baking... I decided I also wanted desert! So I grabbed some apples, strawberries, brown sugar, honey, and a small amount of cream cheese. I whipped up everything but the fruit, put the fruit in a pan and poured the mix over it and added a sheet of puff pastry.

 Enjoy your chicken and the veggies...
And some tart for desert! (baked for about 15-20 minutes)

Balsamic Glazed Steak Rolls

So I saw these and thought they looked super pretty and decided to make them.... I got lucky and had everything at home to make them!

Steak
- 2 slices of thin steak
- salt and pepper
- 3 tbsp. Worcestershire sauce
- steak seasoning of your choice

Filling
- 2 carrots
- 1/2 zucchini
- 2 cloves garlic
- 1 tsp Italian herb seasoning

Glaze
- 1 tsp butter
- 1/8 cup balsamic vinegar
- 1 tbsp. brown sugar
- 1/8 cup beef broth
- 1 tsp garlic


 Season your steak with salt and pepper and let them marinate in the Worcestershire sauce for about an hour.... I went for a run.... but then I was hungry AND tired.
 Chop your veggies into fry shapes and put into a bowl with the Italian seasoning and the chopped garlic.
 Put your butter and garlic in a pan and let the garlic brown. Put in the rest of your glaze ingredients and let simmer until its about half the liquid it was. Put your veggies in a pan and allow to cook for about 3-5 minutes.

 Roll your veggies into your steak and use a toothpick to seal it. Toss those into your pan and brown on all sides. They should be done reeeeeeaaaaalllyyy fast.
