Garlic Ranch Chicken Pizza

Ingredients:
- 2 cups Mozzarella Cheese (or veggie cheese shreds)
- 1/2 cup Bacon
- 1 cup Chicken (shredded)
- 2 Tomatoes

- 2 tbsp Sour Cream
- 3 tbsp Mayo
- 2 1/2 tbsp Milk (or original soy milk)
- 1/2 tsp Garlic Salt
- 1/8 tsp Parsley
- 1/4 tsp Onion Powder

Go ahead and look back through my posts for the whole wheat crust recipe.... Make that about an hour before you want to start making your pizza.

Pre Heat your oven to 400F
At the same time, boil your chicken until you can easily shred it. Make your bacon however you like it during your chicken boiling....

Once your chicken is done, shred it in a bowl with the second half of your ingredients above.

Spread your chicken mixture over your crust and top with sliced tomato, cheese, and bacon pieces.


Put this into the oven until the cheese melts if you have precooked your crust; put it in for about 20-25 minutes if you used your crust raw.

Enjoy!

Baked Honey Garlic Chicken over wild rice

Ingredients:
- 1 lb chicken (chopped into small pieces)
- 2 eggs
- 1 cup Panko bread crumbs

- 1/3 cup honey
- 4 cloves garlic
- 2 tbsp soy sauce
- 1bsp hot sauce
- 1 tbsp cornstarch
- 2 green onions (chopped)

Preheat your oven to 400F

Dip your pieces of chicken into the eggs then the panko.

Put all of your chicken on a baking pan and put it into the oven for 15-20 minutes.


While those are baking, take your honey, garlic, soy sauce, and hot sauce and put them into a saucepan until all melty.

Mix your cornstarch with 1/3 cup water and slowly add to saucepan while stirring. Let thicken for about 3-5 minutes.


Make whatever rice you want while your chicken finishes cooking.

Place your chicken on a bed of rice, sprinkle the sauce and the green onions on top and enjoy!!

Lemon Chicken with Lemon Pepper Asparagus

Ingredients:
- 2 chicken breasts
- 1/4 cup whole wheat flour
- 1/2 tsp salt
- 2 tbsp olive oil
- 1 tbsp lemon pepper
- 1 bunch of asparagus
- 2 lemons

Pound your chicken ( using a hammer.... obviously.... if you don't actually own a tenderizer)

Coat that in the flour and salt

Throw on a pan with 1 tbsp of oil and however much lemon pepper you want and cook for about 3-5 minutes per side.

Add the rest of the oil to another pan, layer on the sliced lemons then lemon juice, then the 1 tbsp of lemon pepper. Lastly put in your asparagus.

Allow that to sit for about 2-3 min and then cover to steam.



 Almost done!

 Make yourself a salad as well and plate this up. Enjoy the lemony goodness.


Marinated Chicken with an Asian Slaw

Ingredients:

Marinade
- 1/2 lemon
- 1 tbsp garlic
- 1/2 tsp ginger
- 2 tsp soy sauce
- 2 tsp sesame oil

- 2 chicken breasts

Slaw
- 3 cups of cabbage
- 1/2 bunch of mint
- 1/2 cup almonds
- 1/2 cucumber
- 2 cups broccoli slaw

Slaw Dressing
- 2 limes
- 2 tsp rice wine vinegar
- 2 tbsp olive oil
- 1 tsp sugar
- 1 tsp soy sauce
- 1 tsp sesame oil



Marinade your chicken for 15-30 minutes in a bowl filled with your marinade.
While that is sitting, put together your slaw and dressing in separate bowls.
Toss your chicken in the pan and saute' for about 15-20 minutes. With 5 minutes left, toss your dressing into your slaw and mix.
Then enjoy a super light and refreshing meal. :)



Zucchini Noodles and Sautee'd Seafood

Ingredients:

Lemon/Basil Dressing
- 1 cup of basil
- 1/4 cup almond slivers
- 2 garlic cloves
- 1 shallot
- 1/4 tsp red pepper flakes
- 1/2 cup olive oil
- 1 tsp rice vinegar
- one lemon zested

- 1/2 lb shrimp
- 4 tilapia fillets
- 2-3 zucchini


 Okay so while your seafood is thawing.... if you're like me and buy frozen... chop up your basil and shallots and add everything for the dressing into your food processor.


 Run that food processor until it's as smooth as you want it.
 Candid.... thanks greg.... but throw 2 tbsp of your dressing in the pan with your seafood. While thats simmering, shred your zucchini into noodle like shapes. 
Let that cook until its done and then set aside.
Add your zucchini and some more dressing to the pan and let that heat up until the zucchini is soft (like 5 minutes).

Plate it like you would any pasta with a sauce. Garnish with some lemons and enjoy your super healthy noodle dish :)

Red pepper and Spicy Chicken Sausage Pasta


1 shallot
3 cloves garlic
1 jar of red peppers
1 cup chicken broth
1/2 tsp salt
1/2 cup soy cream
1/2 cup parm cheese
sprig of parsley
2 tbsp chopped basil
Chicken sausage


Cook your sausage enough so that it is easy to cut into medallions.
Chop your shallot, red peppers, and garlic and cook in a pan for about 5 minutes.


Pour into a food processor and blend until mostly liquid.
Sear your sausage medallions.
Add back in your blended mixture.
Pour in the rest of your ingredients.
Let everything simmer together for about 5 minutes.
Add your pasta and toss in the pan until covered.

Serve with a veggie and with basil and parsley on top of your pasta! Yum!

Birthday Cupcakes!

This makes about 8 cupcakes....
Cupcakes:
3/4 cup flour
1/8 tsp baking soda
2 tsp baking powder
1/2 cup cocoa powder
pinch of salt
1 tbsp butter
3/4 cup white sugar
1 egg
1/2 tsp vanilla
1/2 cup milk

Frosting:
1 cup powdered sugar
1 tbsp butter
1 tbsp milk
1/4 tsp vanilla

Oven at 350 deg F
Put all of your dry ingredients for the cupcakes in a bowl.
Add your butter and sugar to your mixer and beat until mixed
Add your egg and vanilla and mix
Alternate pouring in your dry mix and your milk until all is in the mixer
Poir into cupcake pan and put in the oven for about 15 minutes.

While that's baking,

Clean your mixing bowl and pour in everything for your frosting
Mix on medium for about 5 minutes





 Frost with icing and then I splashed with chocolate sauce! yum
