The Beef Well-well-Wellington...is actually kinda rare....

 
 
Strap on your Wellington boots and grab some ingredients...here we go
 

THATS A LOT OF MEAT!

 
Don't forget to flip that big guy
 

 chop up your shallots, thyme, parsley with your scariest knife


Get your shallots drunk on wine and mix in your garlic and herbs


 

 
 
Set your behemoth to the side and rub it down with Dijon mustard... this feels inappropriate at first but its ok.... its worth it  


Peel this paper thin prosciutto and place onto plastic wrap.... easier said than done


Place your drunk shallots and herbs onto your paper thin meats

 


 
Place your mustard massaged tenderloin on top


And wrap up this meat on meat crime like so... and place into the freezer


 make sure your pastry dough is not frozen like mine was... or you'll have to wait 40 minutes to thaw
 Prep your potatoes how ever you like your taters... = )
 Time to break out that big wooden thing your mom used to chase you around the house with and roll out some pastry dough so that it will completely cover your beef like a meat sweater
 cover your meat with said sweater ; )
 baste your care package with egg wash and place in the oven
 Take out of oven after 27 minutes
 Cut open, realize its still mooing... place back in oven for 10 more minutes

Ranch Herb Chicken with Greek Yogurt Mac & Cheese

So for the Mac & Cheese, here are the ingredients:
-2 cups of pasta
-2 cups shredded cheese (I used veggie cheese)
-1/2 cup Greek yogurt
-1/4 tsp onion powder
-1/4 tsp garlic powder
-salt and pepper
 
Chicken Ingredients:
-chicken tenderloins (5-6)
-shake and bake or panko bread crumbs
-parmesan cheese (I used veggie)
-egg wash (1 egg and 2tbsp water)
-whatever veggie you want to use as a side (I used broccoli)
 
 
 
 

 I poured 1/4 cup of parm cheese in the shake and bake seasoning, dipped the chicken in the egg wash and shook them in the bread crumbs.
 Cook at 350 deg F in the oven for 15-20 minutes.
 I used my steamer pot to make some broccoli as a side.
 Gather your ingredients for mac & cheese while your pasta is boiling.
 Boil until al dente. (About 10-15 minutes)
 Before draining your pasta, save 3/4 cup of the pasta water.
 Pour 1/4 cup of the water back into your pasta and add your cheese; mix until melted.
 Add all other ingredients and serve immediately.
 Enjoy a normal portion.....
OR a gigantic portion...... :-D

What was supposed to be chicken caesar salad.... but turned into mad scientist steak salad.....

So I was craving a chicken caesar salad at around lunch time and thought I had all the ingredients at home....turns out I didn't!!

So here are the ingredients I did have.... and what I made instead...
- Balsamic Vinegar (about 2 tablespoons)
- Worcestershire sauce (about 1 tablespoon)
- A1 Sauce (about 2 teaspoons)
- STEAK
- Lettuce
- Cucumber
- Carrot
- Cheese
- Dressing


 Toss your sauces in with your steak and marinade! I let mine sit for about an hour and went for a run :)
 Get out all of your stuff for a salad... whatever you want really... I like my salads somewhat plain.
 Brown up some garlic in your fry pan ...
 Toss your steak in there.... I let mine simmer on the first side for about 3 minutes and flipped.
 Then I browned the second side for another 3-4 minutes.... but I like my beef medium rare....
 Assemble your salad while you're waiting for your steak to rest a bit....
Cut steak and put it in your salad...... then enjoy!

Honey Lime Tilapia with Citrus and Parsley Couscous and mixed Veggies

So my dad asked for a fish dish and this one definitely sounded delicious for dinner tonight!


Ingredients:
Fish:
4 cuts of Tilapia
Lime Zest
Lime juice - about 1 tablespoon
2 tablespoons honey
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/4 cup whole wheat flour
A pinch of salt and pepper

Couscous:
Plain Couscous - 1 cup
1 tablespoon olive oil
1/4 cup parsple
1 tablespoon diced garlic
1 tablespoon lemon juice
Lemon zest

Veggies:
Green Beans
Zuchini
Garlic Salt
1 tablespoon lemon juice



 Mix up a marinade for the tilapia with all of the ingredients for the fish except for the flour, salt, and pepper.
 Put the tilapia in a bowl with the marinade for about 30 minutes.
 While the fish was marinating I started the couscous and veggies. Make the couscous according to the package but also put all of the ingredients in the boiling water. 
 Once the water is boiling,  put the couscous in the pan and take off direct heat. (This will be done in about 5 minutes)
 Make your flour, salt, and pepper mixture for coating the fish. These ingredients are just spred on a plate for easy coating.
 Put all of the ingredients for the veggies into a pan and let simmer. (This will be done about the time your fish is done)
Coat both sides of each tilapia filet in the flour mixture. This will only be a thin coat.
 Allow your oil to heat in your fry pan and place the coated fish in once the oil is simmering. Leave the fish on one side for 4 minutes and flip.
 

 Then let the tilapia cook on the other side for about 2-3 minutes. Don't touch the fish until you're flipping or taking off the heat!!!!

Plate and Enjoy!!!
