Spicy Sriracha Shrimp Zucchini Lo Mein

Ingredients:
- 1 Package Lo Mein
- 1 Tbsp butten
- 1 Zucchini
- 1/2 tsp Red Pepper Flakes
- 2 Eggs
- 2 1/2 Tbsp Soy Sauce
- 1 tsp Ginger
- 1/2 cup Cilantro
- 2 Tbsp Olive Oil
- 1/2 lb Shrimp
- 3 Cloves Garlic
- 1 Tbsp Brown Sugar
- 2 Tbsp Sriracha
- 1 tsp Sesame Oil
- 3 Green Onions


Stir together your brown sugar, soy sauce, sriracha, ginger, and sesame oil in a bowl.

 Chop up all of your ingredients and have them ready by the cooktop because the steps go pretty fast in this recipe.
 Melt your butter with red pepper flakes in a wok. Then add your eggs and cook until scrambled and remove from wok.
 Put in shrimp and cook for about 5 minutes, remove them from the wok.
 Throw in your zucchini and your garlic until the edges of your veggies are browned.
 Add your lo mein and all of your ingredients you cooked, along with 2 Tbsp of the sauce. Let that sit in the wok until your noodles are tender. Throw in your cilantro and green onions and stir.
 Serve up with a bit more cilantro as garnish and enjoy! This is a little spicy so if you need to cut the spice, add a bit more soy sauce. If you like it even more spicy, then add another tsp of your sauce!

Panko Crusted Honey Mustard Tilapia

Ingredients:
- 4 Tilapia Filets
- 1 1/2 Tbsp Honey
- 3/4 cup Panko
- 1 tsp Lemon Zest
- 1 1/2 Tbsp Djon Mustard
- 1 clove Garlic
- 2 Tbsp Parsley
- Smart Balance Spray

Preheat oven to 400*F and spray baking dish with Smart Balance Spray

 Chop up the parsley and zest your lemon. You can also slice the lemon now if you like juice with your fish.
 Mix panko, parsley and lemon zest on a plate. Mix your mustard, honey, and garlic in a bowl.
Brush your tilapia with the mustard mix and place in the panko crumbs. Brush and other side and flip in the panko.
 Place all of your fish on your prepared pan. I used parchment paper to make sure they wouldn't stick and the bottom crumbs would get crunchy.
Bake for 8-10 minutes until tops are golden brown.
 Enjoy with a salad or with a side dish of your choice!

Maple Apple, Bacon, and Blue Cheese Pizza

Ingredients:
- Pizza dough (usually i have wheat pizza dough in my freezer but no dice today, so I got the Pillsbury kind at the grocery store.... still delicious)
- 1/4 Cup Syrup
- 5 slices of Bacon
- 3 oz Blue Cheese
- 1 Apple
- 12 oz Sharp Cheddar
- 1/4 cup Garlic

1. Preheat the Oven to 400*F


2. Slice apples and put in a bowl with the syrup and set aside.


3. Put dough on baking sheet...if it springs back and won't spread... wait about 5-10 min for it to rest and come back.


4. Bake the dough for about 10 minutes. While this is baking, microwave your bacon for about 5 minutes until firm and then cut up.

5. Layer sharp cheddar, apple, bacon, garlic, then blue cheese on the pizzas.

6. Bake 8-10 minutes or until the cheese is all melty.... drizzle with a little bit of syrup and enjoy this contradictory dinner.... sweet, sour, salty and delicious.

PAD-SEE-EEW - Delicious thai Chicken and noodle Dish

Ingredients:
- 12 oz. Chicken Tenderloins
- 1 tsp Baking Soda
- 8 oz. wide rice noodles
- 1/4 cup veggie oil or smart oil spray
- 1/4 cup Oyster Sauce
- 2 tbsp Brown Sugar
- 2 tbsp Soy Sauce
- 1 tbsp White Vinegar
- 1 tsp Molasses
- 1 tsp Fish Sauce
- 2 tbsp Chopped Garlic
- 3 Eggs
- 10 oz. Broccoli

 Soak the chicken in baking soda for about 15 minutes and then rinse off and drain.

 Combine Oyster Sauce, Sugar, Soy Sauce, Vinegar, Molasses, and Fish Sauce in a bowl.
 Start steaming your broccoli when you start your chicken.
 Spray your pan and toss garlic in. Add chicken and 2 tbsp of the sauce mixture. Cook without stirring 1-2 min, flip and cook again for 1-2 minutes. Push chicken to one side and cook eggs on the other side of the pan, scramble and add to chicken.
Cook for another 1 minute to mix.
 Microwave water until boiling and add your pasta, let sit while you add your broccoli to your chicken with another 2 tbsp of the sauce.
 When your pasta is almost done, drain and put in a pan with 2-3 tbsp of your sauce. Toss both the meat pan and the noodle pan.
Toss all together on your plate and top with some of your sauce..... Enjoy!

Zucchini Fritters with an Orange Glaze

 Check out my new dinner sign! My lovely mother got it for me for christmas :-D

 Shred your zucchini and put in a bowl with salt inside a DISH TOWEL (don't use a paper towel like I did.... its falls apart) Let sit for about 15-20 min while you make your sauce.
 I got to use my new zester!

 Butter and scallions....
 Add your sauce ingredients in segments of 1-2 minutes. Then let your mixture sit on low for 8 minutes, stirring infrequently.
 Chop up your mint and dill.
 Add all fritter ingredients to bowl.
 Squeeze out water from your zucchini.... you should get about a cup......use a dish towel!!
 Mix in the zucchini to the rest of the fritter mix.
 Each fritter should be about a quarter of a cup. Pour into sprayed pan and flip after 2 minutes.
Serve with a side of your choice....I went super green and served the fritters with a salad.

Steak and Veggie Salad with Homemade Vinaigrette

3 servings
Ingredients (Salad):
- 2 zucchini, chopped
- 2 red peppers, chopped
- 24oz. steak strips or tips
- 6 small tomatoes, quartered
- 4 cups lettuce
Ingredients (Vinaigrette):
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 2 tsp thyme
- 1 tsp dijon mustard
- Salt and pepper to taste

 Combine all Vinaigrette ingredients in a bowl and mix.
 Pour 2 tbsp of the sauce on the chopped veggies and saute.

 Remove veggies and add the beef until medium rare to medium.


Combine veggies and beef over a bed of lettuce and use 1-2 tbsp of the sauce as dressing.
