Lemon Chicken with Lemon Pepper Asparagus

Ingredients:
- 2 chicken breasts
- 1/4 cup whole wheat flour
- 1/2 tsp salt
- 2 tbsp olive oil
- 1 tbsp lemon pepper
- 1 bunch of asparagus
- 2 lemons

Pound your chicken ( using a hammer.... obviously.... if you don't actually own a tenderizer)

Coat that in the flour and salt

Throw on a pan with 1 tbsp of oil and however much lemon pepper you want and cook for about 3-5 minutes per side.

Add the rest of the oil to another pan, layer on the sliced lemons then lemon juice, then the 1 tbsp of lemon pepper. Lastly put in your asparagus.

Allow that to sit for about 2-3 min and then cover to steam.



 Almost done!

 Make yourself a salad as well and plate this up. Enjoy the lemony goodness.


Marinated Chicken with an Asian Slaw

Ingredients:

Marinade
- 1/2 lemon
- 1 tbsp garlic
- 1/2 tsp ginger
- 2 tsp soy sauce
- 2 tsp sesame oil

- 2 chicken breasts

Slaw
- 3 cups of cabbage
- 1/2 bunch of mint
- 1/2 cup almonds
- 1/2 cucumber
- 2 cups broccoli slaw

Slaw Dressing
- 2 limes
- 2 tsp rice wine vinegar
- 2 tbsp olive oil
- 1 tsp sugar
- 1 tsp soy sauce
- 1 tsp sesame oil



Marinade your chicken for 15-30 minutes in a bowl filled with your marinade.
While that is sitting, put together your slaw and dressing in separate bowls.
Toss your chicken in the pan and saute' for about 15-20 minutes. With 5 minutes left, toss your dressing into your slaw and mix.
Then enjoy a super light and refreshing meal. :)



Zucchini Noodles and Sautee'd Seafood

Ingredients:

Lemon/Basil Dressing
- 1 cup of basil
- 1/4 cup almond slivers
- 2 garlic cloves
- 1 shallot
- 1/4 tsp red pepper flakes
- 1/2 cup olive oil
- 1 tsp rice vinegar
- one lemon zested

- 1/2 lb shrimp
- 4 tilapia fillets
- 2-3 zucchini


 Okay so while your seafood is thawing.... if you're like me and buy frozen... chop up your basil and shallots and add everything for the dressing into your food processor.


 Run that food processor until it's as smooth as you want it.
 Candid.... thanks greg.... but throw 2 tbsp of your dressing in the pan with your seafood. While thats simmering, shred your zucchini into noodle like shapes. 
Let that cook until its done and then set aside.
Add your zucchini and some more dressing to the pan and let that heat up until the zucchini is soft (like 5 minutes).

Plate it like you would any pasta with a sauce. Garnish with some lemons and enjoy your super healthy noodle dish :)
